Mother's Refrigerator Fruit Cake

 

1 can sweet condensed milk

1 jar cherries and juice

2 lbs. raisins - dark/light

1-box graham crackers (crush)

2 bags coconut (lb bags)

1 date or pecans (+ more to your taste)

1-quart pecans

1 candied fruit (large)

 

Mix well. (Dump in dishpan for easier mixing)

Press into bake ware. (2 or more)

Refrigerate.

Eat when your ready!

 

This one is really good.

I personally do not care for fruit cake, but this one is different!

2 eggs

3 medium ripe bananas

1/4 cup milk

1/4 cup oil

1-tablespoon vanilla

2 cups all purpose flour

3/4 cup sugar

1-teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon nutmeg

1-cup nuts

 

Blend eggs, bananas, milk, oil, and vanilla at medium speed until smooth, about 15 seconds, measure rest of ingredients into a bowl and stir to mix.

Make a well in the center of the dry ingredients and pour banana mixture, mix just enough to moisten.

Add nuts.

Spread batter into well greased 9x5x3 inch loaf pan.

Bake @ 350 for 1 hour.

 

(5x3x2 pan @ 350 for 35 - 45 minutes)

2/3 cup sugar

1 1/2 cup milk

3 eggs

2-tablespoon flour

1/2 tablespoon vanilla

1/2 stick margarine

1 can coconut

 

Mix sugar, eggs, flour, and then add milk. 

Mix well & cook in top of double broiler until thick, add vanilla, margarine, and coconut, let cook.

Beat egg whites, put some of the meringue in pie filling, pour in 9 inch pie shell, and brown meringue.

 

Meringue

 

3 egg whites

1/4 teaspoon

6 tablespoon sugar

 

Beat eggs whites until stiff.

Add sugar, and vanilla, beat well and spread on pie.

Grandmother's Cinnamon Rolls

 

1-cup milk

1/4 cup sugar

1-teaspoon salt

1/4 (1/2 stick) margarine

1/2 cup warm water (105 - 115 degrees)

2 packages yeast

2 eggs, beaten

5 1/4 cup flour (about)

 

Scald milk, stir in sugar, salt and margarine.

Cool to lukewarm.

Put warm water in large bowl, stir in yeast until dissolved.

Add lukewarm mixture, eggs and 2 cups flour.

Beat until smooth.

Stir in enough flour to make a soft dough.

turn onto lightly floured board, knead about 8 - 10 minutes.

Place in greased bowl, turning to grease top.

Cover; let rise in warm place, free from draft until doubled in bulk.  About 30 minutes.

Punch down.

Turn out on lightly floured board.

Roll out on wax paper to 1/4 inch thickness.

Put melted butter over it.

Pour cinnamon, and sugar over it.

Roll up and then cut into rolls.

Bake @ 375 until golden brown.

 

This recipe can also be used (without the sugar and cinnamon) for 'dinner yeast rolls'.

4 cups self rising flour

2 cups white sugar

2 cups brown sugar

1/2 cup oatmeal

1/2 coconut

2 cups crushed cornflakes

2 cups melted Crisco

2 tablespoons vanilla

4 eggs

2 cups chopped pecans

 

Roll into balls

Bake 10 minutes in a 350 preheated oven.

 

These are great!

Make em' up in a big dish pan!

Kids love em'

And you can always store the batter in the frig or freezer if you run out of time making them up the first time.

 

Another favorite of mom's for the holidays!

Blackberry Cobbler

 

1-cup flour

1-cup sugar

1-cup milk

Blackberries

 

Mix flour, sugar, milk together.

Pour into a buttered pan.

Pour Blackberries on top of the mix in the pan, the blueberries will sink down into the batter.

Bake for, hmmmm...till done. 

(Keep an eye on it, I want to say about 30 minutes, but not gonna swear to it.)

 

This recipe can be useful for other types of fruit as well, like peach, pear, strawberry and others.

It is quick and easy, especially when you are short on time and ingredients.

The kids love it and so do most guys, give it a try.
